Mexican Bean and Rice Casserole

Boy did I stumble onto a real gem!!  Makes me want to grab my maracas and shake 'em!!!!

2 cups cooked rice
2 cups salsa
2 can black beans, drained and rinsed
1/2 C chopped sauted onions (I used butter)
1 cup cheese, divided

Mix all 4 ingredients together with 1/4 cup of cheese. Bake at 350 in an 8x8 sprayed pan for 15 minutes.  Remove from oven and sprinkle with remaining cheese and bake an additonal 5 to 10 depending on how dark you like your cheese. 

I had another idea as I was eating this as a side with my taco.  Make a mexican lasagna out of it layering the casserole and corn tortillas......YUMMY!!!
