This last week we took the kids to Fair Oaks Farm in northwestern Indiana. The place was incredible. Here is a

GRILLED CHEESE
Wonderful place. Very scenic, very environmentally friendly, very good milk, very expensive.
The grilled cheese for which they are famous is about $6 each. Bread and cheese. Yikes.
Got me thinking, INVENT MY OWN!! So I did.

Ciabatta bread, butter a skillet, split that roll, layer with as much cheese as you want and any kind that goes good together (I used a variety including cheddar, swiss, provalone and pepper jack). Add a tomato if you wanna and cook like a regular ole grilled cheese EXCEPT you need to flatten those babies. Grab your metal spat and SMASH it. Believe me it's better if you do.
These were as good as the ones down on the farm and much less expensive. Spice up a plain old something by trying something new. Everyone loved it!!
