Fresh/Frozen Green Beans

I went to a local farmer’s market with the kids last Thursday and had some of the best Pizza of my life. I am not sure what the secret is but I’d like to have it.
Anyhoo ~ I bought about 3 pounds of fresh green beans and am not a canner. Not because I do not want to be but because I do not know how. It’s not something I’ve had a chance to tinker with yet, but it is on my bucket list.

Here’s what I did.

Snap the beans. 9 year old girls are ALWAYS eager to help with this task EVEN if they like the canned green beans better than fresh. I tell you, they’re strange in the food department. 





Heat pot of water to boiling; a good solid rolling boil. Place thegreen beans into the water and set a timer for 3 minutes.


Dump the cooked beans into a strainer and dip strainer into cold water which your helper is dumping ice cubes into.  This stops the cooking process obviously, so your beans do not get soggy and icky.
Label your bag, load your bag and freeze your bag after you’ve squeezed all the air out to ensure no freezer burn steals your beans.
Thaw OR NOT……add some water to your pot, add beans, heat, add butter, salt and pepper and voila!! Healthy beans fast.
Now I wish I had about 20 more pounds of beans so I can get through the winter. Another item on the already plastered full ‘to-do’ list.
